Born from the centuries-old olive groves near the Alta Murgia National Park in Puglia, Oilalà embodies the purity and passion of our land. This organic extra virgin olive oil is made exclusively from native Apulian olives, harvested at peak ripeness to preserve their intense, fruity flavor and bold character.

The harvest begins between mid-October and December, depending on the season. Timing is everything — olives picked too early or too late can compromise the final product. That’s why we rely on the traditional hand-harvesting method known as brucatura — slow, meticulous, and respectful of the fruit’s integrity. It’s labor-intensive, but it’s the only way to ensure the highest quality.
