The pick of the olives begins, based on weather conditions, from mid-October to December. The harvesting stage is really important and complicated because if the olives are not harvested at the proper time of ripening, there is the risk of maceration and lack of quality of the olives and subsequently of the oil. The manually operated crop called "brucatura" is the best procedure, even if very expensive and slow because it assures the perfect strength of the olive.
